Tequila is made from the juice of the agave plant mixed with already fermented agave juice (pulque), fermented for two and a half days. Then this mix is double distilled, producing a clear white tequila. Gold tequila is aged on oak casks for up to four years.

Mezcal is made somewhat the same way as Tequila, but does not come from the well known tequila area of Mexico.
